Introducing our Bond 3 Small Cask Preview Release. Since 2018 we’ve been working away quietly behind the scenes renovating, restoring and constructing what is now Waubs Harbour Distillery. Our official first Waubs Harbour single malt whisky is still maturing by the ocean and is due for release early 2023 but in the meantime, we bring you our Bond 3 Preview Series, a small cask single malt whisky release, offering an insight into what’s to come for Waubs Harbour Whisky.
The Bond 3 Preview Series takes new make spirit crafted by our Head Distiller, Rob Polmear, at another Tasmanian distillery while our equipment was being installed and then matured at Waubs Harbour Distillery in Bond Room 3. The spirit, a testament to Rob’s experience, knowledge and passion, paired with the influence of our maritime environment, has made for a beautiful, characterful, oily single malt whisky that showcases what is to come for Waubs Harbour, without giving it all away.
The rich and oily Double Tawny from our Preview Series began it’s life in 20L ex-tawny port casks in Bond Room 3 at Waubs Harbour Distillery and was later finished in a 100L ex-tawny port cask, bringing more depth and interest to it’s flavour profile. Best described as being like old gold chocolate on the nose with a lingering oily mouth coating. See Rob’s full tasting notes here.
The sweet, elegant Apera Cask Strength from our Preview Series began it’s life in 20L ex-apera sherry casks in Bond Room 3 at Waubs Harbour Distillery and was later finished in a 100L ex-apera sherry cask. Bottled at cask strength of 62.6% bringing an added intensity to the whisky. Best described as being like a fruit custard flan on the palate with a lingering buttered fruits finish. While this is not Waubs Harbour Whisky’s official first release whisky, we are incredibly proud of the spirit that Rob distilled and then matured at our distillery. Although still relatively young, the Preview Series gives just a teaser into what you can expect from our larger, longer maturation casks of Tasmanian maritime single malt whisky, matured on the edge of the ocean, coming early 2023.
